I'm wilting

When I worked at the library at E.H.P.S last year, I made some lovely friends. One in particular, Mel. We have stayed in contact and she's asked Zane and I to come over for dinner tonight. It's a funny relationship because I went to E.H.P.S as a little girl and she remembers me from then. She's been there a long time and has not changed a bit.

Anyway, I just ventured out to buy some flowers to say thanks for inviting us over and the 15 minutes that I was out made me feel like I was roasting in an oven. Come on mother nature, let up a bit will you! I'm going to bake some cupcakes aswell, even though she said not to bring anything. I don't know what it is, but I just feel strange or rude if I go to someones place empty handed. Hopefully it cools down by tonight.

Obviously you can't tell with a journal, but I just slipped away for about 15 minutes to bake those cupcakes. I don't know about you, but I think cupcakes are a winner at parties. Everyone loves them. So, in saying that, I thought I'd make a picture sequence of the creative process. ( warning: lots of pictures!)

First, set your oven to 180 degrees c.


Put all your dry mixture into your mixing bowl. (I like to sift mine, it makes the cakes really light.)


Add 1 egg and 3/4 cup of milk.




Mix until well combined.


Spoon even amounts into your patty papers.


Place in the oven for 20 minutes, or until golden brown.


And out come the tiny morsels of sweetness.


Next, make up your icing with 6-8 Tbsp of icing sugar...


1 Tbsp of melted butter and some milk. (milk not shown).


Colour your icing and mix. Next, prepare your cupcakes to be iced.


Ice the cuties and add any decoration you wish.


I have added chocolate chips.


Then plate up on a nice dish and serve!


ps. I think this song is so sweet and summery. I love summer, but Australia is being flogged by the heat atm.
